Yesterday saw Oblix at The Shard and Maître Choux provide a reason to look forward to the cooler, crisper Autumn months via a unique afternoon tea collaboration featuring a bespoke sticky toffee éclair and tea flight, to be enjoyed alongside the unparalleled views across the London skyline. The stylish, sophisticated restaurant located on the 32nd floor of the Shard, known best for its exclusive and exciting dining experiences and breath-taking views has partnered with the only choux pastry specialist patisserie in the world to cater to the most discerning of taste buds using the freshest ingredients available.
Adhering to Oblix at The Shard's reputation for seasonality and quality ingredients Group Pastry Chef, Julien Phillipe, Executive Chef, Marcus Eaves and Head Pastry Chef of Maître Choux, Joakim Prat have created a special sticky toffee éclair. Encompassing quintessential Autumnal flavours, the éclair embodies warmth, comfort and a high level of sophistication. The choux pastry filled with delicious vanilla cream that sits between the two layers of pastry, is glazed with gold leaf and chopped pecans.
Working closely with Head Sommelier Vittorio Gentile; Marcus, Julien and Joakim have enhanced the afternoon tea flight with a unique tea and Billecart Champagne pairing, designed to showcase different interactions, while bringing to life new layers of flavour.Savoury finger sandwiches such as ham, Spenwood cheese, celeriac and mustard; smoked salmon, cream cheese and rye have been paired with the Oblix Black Teas (Oblix Blend by Henrietta Lovell, or Waikato Black) and the light, fine and harmonious Brut Reserve; Scones with raspberry jam have been paired with herbal infusion (Hibiscus Flowers) along with a flute of Brut Rose which is elegant and flight in flavour, and finally the éclair has been selected carefully to precisely pair with Cornish Manuka tea with a flute of the full-flavoured Demi Sec.
The pastry will sit alongside a selection of mini desserts including freshly baked scones and clotted cream; dark chocolate and passion fruit tart and mandarin and sherry cheesecake, making this afternoon tea a must have experience for the Autumn. The sweet offer is expertly balanced with savoury finger sandwiches, freshly baked cranberry scones, seasonal jams and London honeycomb.
The new menu launched on 14th October 2019 and be available until the end of November. Prices at just £42 per person the Maitre Choux afternoon tea is served Monday to Sunday, from 2:45pm to 4:30pm.
